Japanese New Years Fried Chicken

1 3-pound fryer, cut up, or boneless thighs cut into small pieces
Flour for coating (may use Mochiko flour)
Oil for frying
Salt and pepper to taste
Mirin Sauce
2/3 C Soy Sauce
1/3 C Mirin
1/2 C Sugar 

In a saucepan, over medium heat, combine the shoyu, mirin and sugar. Simmer until the sauce reduces somewhat and thickens. Set aside.

In a deep frying pan or wok, heat about 1 inch of oil until very hot, but not smoking. Dredge the chicken pieces in seasoned flour then carefully place in the hot oil. Fry until golden brown. Place on absorbent towel and keep warm until ready to serve. Serve with the dipping sauce. Serves 4.
