Uncle Don's Hawaiian Recipes

Joe's Special

Us guys from Hawaii go Califrisco lotta times and one time we wen eat dis at one numba one Italian restaurant, so we like share wid you. We ate at da counter so we could steal da recipe.
  • 2 T olive oil, or more as needed
  • 1/2 pound hamburger, ground round da best.
  • 1 medium round onion, chopped
  • 2-3 cloves garlic, minced.
  • 1 pkg frozen chopped spinach, drained
  • 1 egg for each person and one for the pot (lightly beaten)
  • 1 T Italian seasoning, more as needed
  • Salt and pepper to taste
  • Parmasean cheese, grated fresh off da block, all what you like serves two people wid leftova for breakfast.


Defrost da spinich and squeeze da liquid out. Beat da three eggs lightly. Get one wok or fry pan hot, medium high heat, and saute, (stir-fry) the onion and garlic until almost soft, look kina shiney, add da hamburger and mix and brown da meat until all da red is gone and everything stay mixed. Salt and pepper. Drain da pan of fat but no pour da res' down da sink. Now sprinkle da spinach ova da meat and mix em all up.

You gotta move fast cause dis stuff no gon wait while you doing somting else. Pour da beaten eggs all ova da meat an spinach and stir-fry some more, keep tossing until slightly firm and da eggs stayset. (about 30 seconds). Take off da fire, taste and adjust the seasoning, den spoon onto da warm plates. Add the parmesean cheese all ova. A little tossed tomato and lettuce salad wid Italian dressing, oil and vinegar and more cheese on da salad goes great wid dis... 

Fo shua get Hard San Francisco Sour Dough Bread wid lots of butter and get ready fo have seconds. Consida one glass red fo really make dis numbah one ono.
